Ingredients

Adjust Servings:
1/2 cup onion
2 carrot
2 celery
1 lb uncooked bratwurst links
2 15oz cans navy beans
1 small can diced green chilis
3 cups chicken broth
2 cups almond milk
2 Tbsp corn starch
1 tsp fresh ground black pepper
to taste salt
1 cup shredded mozzarella cheese

30 minutes and one pot is all it takes for this warm bowl of comfort! As I’ve said before, my mom does not like to cook, but this is one recipe she actually likes to make. We both had it for the first time on a Scout campout and it really hit the spot (everything tastes better when you’re camping 😉 ). She asked for the recipe and it’s been part of our repertoire since (with a few modifications). It’s simple but delicious, enjoy!

Dice all the vegetables, set aside. Remove the casings from the bratwurst.

To make this a one-pot recipe, brown the bratwurst in a large stockpot, then set aside. Add veggies to the pot and saute with some olive oil and salt until beginning to soften. Add back the bratwurst, the navy beans (you can drain them or add the whole cans if you want the starchy liquid to add body to the soup), and the diced green chilis.

Add the chicken broth and bring to a boil. Dissolve the corn starch in the cold milk (it has to be mixed into cold liquid or it will just make clumps) then add to the pot and return to a boil to heat through, then reduce to low. Stir in the cheese until melted and serve!

Our dog (Rosie) is very food motivated, and she loves to sneak into the kitchen no matter how many times we try to get her to leave. Her favorite place to stand is right between you and the counter just in case anything drops. She is an American Bully so she's pretty much all muscle, meaning she's pretty dense. Beware if she's standing right behind you, because taking a step back will end with you on the floor!
