    Gnocchi lasagna is a layerless twist on the classic dish. Fluffy potato gnocchi replaces the pasta layers, baked in all the rich, tamatoey, cheesiness you crave. It’s an effortless, one-pan meal that delivers all the lasagna flavors you love in every bite—no layering required! This recipe comes together super quick for a weeknight meal, and it’s all mixed in the same pan you bake it in!

    This recipe works well with store-bought gnocchi, but if you can make it by hand it elevates it that much more. Either way it’s simple and delicious, so give it a shot! (Find my gnocchi recipe here)

    Prepare all the ingredients. Preheat oven to 350F (unless preparing ahead to refrigerate or freeze)

    Add the gnocchi, cooked beef/sausage, tomato sauce, and italian seasoning to an 11x7" casserole dish and stir to combine. Sprinkle over the shredded mozzarella cheese (you can also add parmesan on top if you like).

    At this point you can bake for 30 minutes covered with tin foil, 10 minutes uncovered (and optionally broil for 3-5 minutes if you like the cheese more browned).

    Cover and pop in the fridge or freezer to use at a later date.

    Let stand 15 min before cutting. Optionally, you can top with additional parmesan, or this is delicious with a dollop of cool ricotta on top. Sprinkle with fresh parsley and enjoy!
