Ingredients

Adjust Servings:
15 whole Graham Crackers (the 4-section Large Pieces)
1/3 cup sugar
1/3 cup butter, melted
1 can sweetened condensed milk
2 whole egg yolks (you can "strain" out the whites using your fingers)
1/2 cup lime juice
1 tbsp. lime zest
6 whole kiwi, peeled and sliced (when peeling off the skin, try to get as little kiwi "meat" as possible)
sweetened whipped cream for serving

Hi there, bakers of the internet!

Today I would like to share with you this delicious kiwi pie! It has an amazing blend of sweet, sour, kiwi and lime that makes your taste buds want to party! I like recipes that are different, and unique, this pie is a perfect mixture of both. Kiwi pie is for the lover of creamy, smooth and sour (but not too sour). I love to have a nice cool treat after dinner, and this is perfect. I hope you bake it, and I hope you love it! (Disclaimer, this is a variation of the pioneer woman’s kiwi pie recipe)

First of all, get your ingredients ready. :)

preheat your oven to 350 degrees F.

Simply pulse the graham crackers in a food processor. (Tip! If you don’t have a food processor, use a rolling pin with the graham crackers in a baggie)

Add the melted butter and gently stir together until the crumbs are slightly moldable, (But still Crumbly).

Press into a pie pan and bake for about 5 minutes, or until the crust is golden brown and firm/set. Then remove the crust from the oven and set it aside to cool. (Tip! Use oven mitts, it’s safer).
You can always use a normal pie crust if you want.

Filling

Combine the sweetened condensed milk, egg yolks, lime juice, and lime zest in a bowl and mix together until smooth, thick and creamy. Mix for about 2 to 3 minutes.(Remember! Electric mixers are your friend)

Pour the mixture into your crust and bake for 15 minutes.

Remove the pie from oven, allow to cool, then refrigerate for at least 1 hour or more.

Finishing Touches!

Top with kiwi slices and add whipped cream to serve., don’t forget to keep it in the refrigerator.

Whipped Cream:
Pour about ½ a cup of heavy whipping cream into a bowl, and whip on high for about 1 to 3 minutes.
Add sugar and honey to taste.
