1 head cauliflower

2 small beets

1/4 cup tahini

1/4 cup lemon juice

3 Tbsp extra-virgin olive oil

1/2 tsp cumin

Directions
This recipe started as an experiment to use up ingredients in the fridge, but the more people that tried it the more compliments I got. I decided I had to put it up so other people can make it at home! Enjoy!

Preheat oven to 400F. Cut the beets into chunks and toss with olive oil and salt, wrap in tinfoil and roast for 45min-1 hour. |

Cut cauliflower into florets, toss with olive oil and salt and roast for 25 min until soft. |

Allow all the vegetables to cool, then combine in a food processor with the tahini, oil, lemon, cumin, and salt. Taste and adjust to your liking :) |
