Hello, my beautiful readers!

Today I decided to bake some mini cheesecakes! The great thing about mini desserts is that you can make a ton of them, and when you eat a lot of them you don’t feel as guilty. Another thing is you don’t have to stick to one big pie with one flavor. you can make many different varieties of flavors. (Disclaimer: this recipe is a slight variation of the “All-Recipes” mini cheesecake recipe)

First things first, please, please, please, Preheat your oven to 350 degrees F, before you do PREHEAT IT, take any pans out of the oven (if any). it is Way too hard to take pans out after the oven is preheated because they are too hot! So please, fallow both of these precautions, I’m guilty of not following them, and it’s not good.

You will need to line a mini (it doesn’t have to be mini) muffin tin, or tassie pan with cupcake liners.

You will need to crush all of the vanilla wafers. You will have a bit too much, but better safe than sorry.

After the wafers are crushed, add butter. Put about ½ teaspoon in each mini cupcake liner.

IN a mixing bowl, beat the cream cheese, sugar, eggs and vanilla, until you have a nice light and fluffy mixture. By the way, mixers are your friend, I tried to mix this by hand, and it’s a lot harder than it looks! Fill each cupcake liner with the mixture, close to the top, or you can do what I did, and use a small ice cream scoop.

Now simply pop them in the oven for 15 minutes, let them cool and top them with the filling of your choice.

If you want to use a different filling or make one yourself, here's a simple recipe you can use:

You will need:
1 cup water
3 tbs. Corn starch
2 ½ cups of the fruit of your choosing
¾ cup sugar
Directions:
Mix the water and cornstarch together in a saucepan (preferably using a whisk)
Mix your fruit into the water
Cook your mixture over medium heat until it thickens (about 10 minutes)
Please let it cool before you use it.

Elaine, your blog has such a cool design, and I love how your voice shines through in your writing! And…YUM, these sound delicious!

Great job. These look Soo good. I think it would be fun to substitute raspberry for the cherry and see what happens!
